I N G R E D I E N T S
>> homemade broth
+ 4 -6 homemade frozen veggie broth cubes ( recipe here)
+ 2 mushrooms chopped very fine
+ some old spring onion leaves
+ fresh ginger
+ fresh cilantro and parsley
+ a lemon slice
+ oil: veggie oil, sesame oil, chili oil, soya sauce
>> veggies & noodles
+ rice noodles
+ 4 leaves bok choy
+ heaped handful of mushrooms
+ 8 radishes with leaves
+ 4 hard boiled eggs
>> topping
+ fresh spring onion
+ sesame seeds
+ fresh cilantro and parsley
I N S T R U C T I O N S
Start with the vegetable Broth:
1. Combine the oil mixture with mushrooms, spring onion and a lemon slice ( Squeeze some of its juice) in a pot and let it simmer on low fire. Stir a couple of times.
2. When the vegetables are fairly golden, add the veggie broth cubes and let it simmer with lid on for a while. Don’t rush making the broth, as the flavour gets more intense over time. Also don’t let your broth boil, only slowly simmer on low heat.
3. Add two cups of water, some ginger, salt, cilantro and parsley. If you don’t like A citrusy broth, remove the lemon slice. Stir well, taste your broth, add some more spices if needed and let it simmer again with lid on. In the meanwhile you are going to prep your veggies and noodles.
4. When almost finished with the rest of the soup ingredients, you add another 2-3 cups of water and let it simmer for about 5 mins. Until broth is nicely heat up.
Veggies and noodle prep:
1. Place a pot of water on the stove and bring it to boil. Add rice noodles and eggs and cook them in 8-10 mins.
2. In the meanwhile, you slice the radish in half and sauté them in a skillet with some vegetable oil for about 6-8 mins. Both sides need to be a bit golden and the leaves need to be very crispy. Place radishes in a bowl.
3. In the same skillet, sauté the mushrooms ( either whole or sliced in half) for about 4 mins and add the bok choy in the last one or two minutes. You want the bok Choy fairly fresh and juicy.
4. Chop some spring onions and herbs for the topping.
Place in a large bowl some noodles ( the amount you prefer), pour the vegetable broth over it and put as many veggies on top as you like. Garnish your bowl with the herbs, sesame seeds and maybe some extra chili oil or soya sauce if you like it spicy! Bon appetite
*add some tofu to make a fancy feast bowl! Or if you are a meat eater I bet some chicken or pork will make you happy.
